Menu Monday - Taco Soup

This is a recipe passed on to me by my sister. This is very easy and you can make and eat immediately...or when it gets to the temperature you like. Personally, I like to make it in the morning and let it sit in a crock pot. This soup (along with chili) tastes better after it sits for a while.

Taco Soup

1 lb of meat (hamburger, turkey burger, deer meet)
1 (dry) packet of taco seasoning
1 (dry) packet of ranch dressing
1 can of corn
2 can of pinto beans
2 can of chili beans (hot or regular, what ever you like)
1 can of Rotel (diced tomatoes with chilis)
2-3 cans of diced (or petite) tomatoes

Brown the hamburger then add all other ingredients. Do not drain any juice from the cans. You can serve with sour cream, cheese and/or tortilla chips with this.

Another tip: If you are in a cost savings mood you can get all generic name brands and it taste just the same. Seriously, if you buy all generic items the cost to make this meal is very minimal. (Just a tip)

Enjoy!

  1. I so almost made this today, but we didn't have everything I needed. I have White Chili in the crockpot instead.
